Beef Short Ribs with Root Veggies
This is a stress-free recipe because it's cooked in one pot, and made with whole foods.
3-4 pounds beef short ribs
4 onions
8 carrots
4 parsnips
2 cans undiluted beef broth
chopped fresh parsley for garnish
(1) In large pot place ribs. Add broth.
(2) Add water to make enough liquid to cover ribs.
(3) Bring to boil. Skim off foam.
(4) Reduce to simmer, and cook, partly covered for 2 hours.
(5) Cut onions in half lengthwise, add to pot.
(6) Peel and cut carrots and parsnips into chunks, add to pot.
(7) Simmer in pot a further 20-30 minutes, till tender.
(8) Place meat and vegetables on serving platter.
(9) Serve broth alongside in gravy boat.
