Balsamic Roast Beef
I really enjoy serving this roast at a sit-down family dinner. It's peaceful. Everyone enjoys the meal, and the time spent together. Simple pleasures.
1 3-pound boneless beef tip roast
2 tbsp olive oil
3 cloves garlic, chopped or minced (whichever is easier)
1 tsp mixed herb seasoning
1 cup balsamic vinegar
Brown roast in oil on medium heat in open skillet. Season with salt and pepper, and mixed herbs. Rub minced garlic over roast. Place beef in dutch oven or slow cooker. Pour balsamic vinegar over roast. Cook on low for 6-8 hours. Remove beef, let sit 10-12 minutes. Meanwhile, transfer juices to a sauce pan and thicken on stove by adding some flour and water (shake together in jar to mix well). Stir while adding flour/water.
