Apricot Pork Roast

This is best made with pork loin. And best made in a slow cooker.

3-4 pound pork loin
1 can chicken broth (condensed)
1 jar apricot preserves (can use jam, jelly)
1 onion, chopped
2 tbsp dijon mustard

Combine all the ingredients (except pork) and mix well. Place in slow cooker. Add pork. Cut loin to fit. Stir to coat meat. Cover and cook on low for 8-9 hours, or cook on high for 4-5 hours. When done, remove meat and let rest for 15 minutes. Slice and serve with sauce on the side.
