Amber Chicken with Peach Sauce

Serves 6.

Ingredients
* 6 skinless, boneless chicken breasts or 12 thighs
* 1/4 cup butter
* 1 can chicken broth
* 1/2 cup soy sauce
* 1 cup uncooked rice
* 2 tbsp cornstarch
* 1 can peach pie filling (15 ounces)
* 1/2 tsp curry powder

1. Brown chicken pieces slowly, both sides, in butter
2. Combine broth and soy sauce
3. Pour 2/3 cup of broth/soy mixture over chicken
4. Cover and simmer chicken for 30 minutes, turning 2-3 times
5. Cook rice, according to package in in shallow oven-proof dish (or, cook and transfer into shallow dish)
6. Spoon chicken pieces onto top of rice, keep warm
7. In saucepan, mix cornstarch with small amount broth
8. Add remaining broth, and cook, stirring constantly until thickened
9. Pour over chicken.
10. Add curry powder to peach pie filling and heat.
11. Spoon curry/peach mixture over chicken before serving
